Let’s Go Bananas! Food Hack!
I can't imagine a life without bananas! They are the best base for nice cream and smoothies, and are perfect to replace eggs when it comes to pancakes, muffins, waffles, or any other baked goods. Whenever I bake something, there has to be a smashed banana in it.

I love to drink cold lemon water for detoxing. It's healthy, tastes good and makes me feel focused and fresh. If I eat a lot of unhealthy food for a few days, then I also love to eat one day raw to balance it out.

Consuming Consciously

As I decided to become vegan, my whole life changed. It´s not only about the food. You become more aware of what is happening around you; the animals, the nature, the people; you see everything from another point of view. After I became vegan, I started a dietitian apprenticeship and blogging, which were one of the best decisions of my life so far -- just because I became vegan.

Berry Cinnamon Buns

 

INGREDIENTS:

 

Icing:  

½ cup icing sugar

1 tsp lemon juice

 

Toppings:
Berries
Icing
Sugar
Lemon juice
Nuts

 

Dough:
310g Spelt flour
160g Whole grain spelt flour 60g Brown sugar
¼ tsp Salt
155g Soymilk
80g Margarine
20g Yeast
155g Apple puree

 

Filling:
100g Margarine
230g Brown sugar
3tsp Cinnamon
4tsp Vanilla

 

METHOD:


Put the flour, sugar and salt into a big bowl and mix them. Put the soy milk, margarine and apple puree in a pan and slightly warm it up (Stir constantly). Try to reach body temperature, add the yeast and don’t stop to stir. Attention: When the temperature is over 40°C, the yeast bacteria will die and the buns won't ́t rise, so in this case, let it cool down before you add the yeast. Knead the flour mixture and the soy milk mixture together (knead 3 minutes). Cover it with a kitchen towel and let it rest in the sun (or any other warm place) for about an hour. Continuing with the filling, melt the margarine and mix it with the sugar, cinnamon and vanilla. 6. Preheat the oven (180°C). Cover your worktop with flour and roll the dough into a square shape.

 

Brush the dough with the filling (you can also fill it with some berries if you want to). Roll the dough up into a long starting at the long side. Then cut into 12 slices. Place the rolls cut side down on a with a baking sheet covered baking tray. Bake rolls in preheated oven until golden. Mix about 1/2 cup icing sugar with a little bit lemon juice and pour it over the buns (it works best if you let them cool down first). Top the buns off with some berries and nuts.

 

 Red Velvet Pancakes

 

INGREDIENTS:

 

150g All purpose flour
25g Beet Root powder
50g Sugar
50g Oil (I recommend coconut oil because of the taste.)
1 Ripe mashed banana
150ml Soymilk
1 tsp Vanilla
1 tsp Apple vinegar
2 tsp Baking soda
Topping of your choice

 

METHOD:


Mix all the dry ingredients. Add all the liquids and the smashed banana. Preheat a pan with on medium heat and grease it with some oil. Using 3 spoons each, cook the pancakes till bubbles appear on surface, turn and cook further until cooked through Top them off with the topping of your choice (I used soy yogurt, different kinds of fruit and some icing sugar.)
