Cookie Dough Nice Cream

Ingredients

150 g chickpeas, drained and rinsed

4 frozen bananas (400g)

1 tbsp crunchy salted peanut butter

1⁄2 tsp vanilla

1-2 tbsp dark chocolate chips toppings

Date sirup

Mulberries

Soy crunchies

More chocolate chips

Method

Add cooked chickpeas, crunchy peanut butter, bananas and vanilla to a high-speed blender and pulse on low speed until smooth. Use a tamper and play around with the other speed levels to get to the desired consistency. Transfer nice cream to a jar and serve with mulberries, chocolate chips, date syrup and soy crunchies on top. Instead of soy crunchies you could use puffed cereal. Savor immediately.

Starting The Day Fresh!

I always start the day with fruit before I eat anything else. Before my first meal I have at least 4 cups of filtered, re-mineralized water and some kind of physical activity (walking, cycling, running, weights). When making meal choices I try to listen to my intuition. Most of the times I find my body craving green smoothie bowls so I eat those a lot.

Think of all the yummy tuna dishes you used to eat before you went vegan - with jackfruit (and powdered seaweed for the fishy taste) you can turn them all vegan. The taste and consistency are so authentic that you could even trick meat-eaters.

Creamy Tomato Pasta

Ingredients

Soup Base

200 g pasta

2 tbsp tomato paste

40 g dried tomatoes

300 g cherry tomatoes

2 tbsp nutritional yeast

2 tbsp crunchy almond butter

2 garlic cloves

1 tbsp dried Italian herbs

1 red onion

Salt and pepper to taste

Pine nuts, cherry tomatoes and fresh basil to serve

Method

Cook pasta according to instructions on the package. Drain pasta and keep the pasta water. In the meantime, slice garlic and toast it in a pan on high heat without oil until slightly brown from all sides. Add the toasted garlic, dried tomatoes, tomato paste and nutritional yeast to a high-speed blender and process together with about 300g hot pasta water. Slice cherry tomatoes. Dice the red onion finely. Add oil or water to the pan and fry the onion until soft and translucent. Add cherry tomatoes to the pan and continue frying until they are soft. Pour the blended mixture into the pan, add Italian herbs, salt, and pepper and turn off the heat. Let simmer for another 1-2 minutes before you stir in the almond butter. Combine the cooked pasta with the sauce before serving. Serve on a plate and top off with pine nuts, raw cherry tomatoes and fresh basil.
