Layered Chia Pudding with Pumpkin Spice & Coconut Milk

Ingredients

Pumpkin Puree Layer

8 tbsp pumpkin puree

2 tbsp pumpkin pie spice

½ cup canned coconut milk

2 tbsp maple syrup

Chia Pudding Layer

2 cups almond milk

1 tbsp cinnamon

3 tbsp maple syrup

½ cup chia seeds

½ tbsp pure vanilla extract

Baked Apple Layer

2 apples

1 tbsp cinnamon

1 tbsp maple syrup

Some grated ginger

For Serving

Homemade almond crunch granola

Baked grapes

Instructions

1. Combine the pumpkin pie layer ingredients in a small bowl, mix them and put them in the fridge for about 30 minutes.

2. In another small bowl, combine the chia pudding layer ingredients and mix them. Put it in the fridge for at least 30 minutes, too.

3. Once the chia pudding has thickened, begin assembling your jars. Put 3 teaspoons of the baked apple layer to the bottom of each jar. The next layer is the chia pudding (about 4 teaspoons). The last and also my favorite layer is the pumpkin puree layer. Top each jar with some homemade granola and fruits of your choice. I chose baked grapes.
