Matcha Coconut Bliss Balls

These bliss balls are an incredibly delicious substitute for dessert. I often eat them as a midday pick me up as well. Matcha is incredibly high in antioxidants and has also been shown to boost liver, brain and heart health. Matcha does contain caffeine, but won’t leave you crashing like coffee and sugar might.

 

Makes 12-15 balls

 

ingredients

o 1½ cups dried unsweetened finely shredded coconut

o ¹⁄³ cup almond meal

o 2 tbsp melted coconut oil

o 2 tbsp coconut nectar

o ¼ tsp vanilla extract

o ¼ tsp pink salt

o 1 tsp high quality matcha powder

o Optional: add 1 scoop vanilla plant protein powder

 

Instructions

• Add all ingredients into a high powered blender or food processor. Blend until smooth.

• Add a little extra coconut oil if necessary. Roll the mixture into bite size balls, coating them in coconut/matcha as you go.

• Store in the refrigerator.

• Enjoy!

 

To store:

• Keep in airtight container and refrigerate for up to 2 weeks.

• Store in freezer for up to 1 month. 

 

To serve:

• Let the refrigerated balls sit at room temperature for at least 10 minutes to soften wrappers
