Vegan Sweet Potato Waffles

Makes 8-10 waffles


o 300 g cooked and mashed sweet potato

o 200 g (wholewheat or mixed) spelt flour

o 2 tbsp arrowroot or cornstarch

o 2 tsp baking powder

o Pinch of salt

o Pinch of nutmeg

o 1 tsp cinnamon

o 1 tbsp apple cider vinegar

o 250 ml almond milk

o 3 tbsp mild olive oil

o A few tbsp of coconut oil, to bake


• Mix all the ingredients until you get a thick waffle batter.

• Grease a warm waffle maker and scoop some of the batter onto the waffle maker.

• Bake for 3 to 4 minutes (without opening the waffle maker!).

• Top with fresh fruit and maple syrup.
