This red lentil soup is packed with healthy ingredients and is perfect comfort food for colder autumn days.
o 1 medium onion, chopped
o 2 carrots, peeled and chopped
o 250 g red lentils
o Salt, to taste
o Ground red pepper, to taste
o 1 tsp sweet paprika o ½ tsp spicy paprika or cayenne pepper
o ½ tsp turmeric powder
o 2 tbsp extra virgin oil
• In a cooking pan, place 2 tbsp olive oil, sliced onion and carrots. Cook on medium heat, stir and add some water occasionally. Rinse lentils and add to the pot, along with 2 cups of water. Cover and cook for 20 minutes, or until lentils are soft. Add salt, black pepper and spices. Stir in and leave on medium heat. Occasionally stir and add more water if needed. When lentils are cooked, blend everything until smooth. Top with fresh parsley and serve warm.
